Zucchini Fritters

These fritters are a delicious way to enjoy zucchini.  Easy to prepare and you can add extra ingredients to spice them up to your liking.  Great for breakfast, lunch or dinner, served avocado slices, tomatoes or a side salad.  Fritters can be frozen and used at a later date.
1 medium to large zucchini, coarsely grated
1/2 cup Greek yogurt or sour cream)
1 clove garlic, minced or chopped
Lemon zest optional
1 teaspoon lemon juice
Pinch of sea salt to taste
Black ground pepper to taste
1 large egg
1/4 cup all purpose flour
¼ cup panko bread crumbs
1 tblsp parmesan cheese
1 green onion, chopped
½ tsp thyme
Fresh chopped basil or parsley or ½ tsp or each dried
Virgin oil for frying fritters
½ tsp chipotle or hot sauce ( optional )
Place coarsely grated zucchini in a colander and squeeze out any excess water. In a large bowl combine zucchini, parmesan, minced garlic, herbs, lemon, egg and flour, panko bread crumbs.  Season with salt and fresh pepper and sauce.

Heat oil in a skillet over medium high heat.  Make batter into patty form and place into the skillet.  Flatten slightly with a spatula and fry until nicely golden, about 2-3 minutes. turn and fry the other side until golden too.

Serve the fritters immediately with yoghurt or sour cream, sprinkle with chive.  You can also freeze patties for lunches.
