Basil & Garlic Maple Smoked Shrimp


These delicious colossal fresh water shrimp are an excellent choice for the barbecue season. With very little cooking time, shrimp are wonderful as an appetizer or as the main dish! Marinated in white wine, garlic, basil and Canadian maple syrup….the flavour combination burst in your mouth. A sure winner for any barbecue get together.


6 colossal shrimp
1/4 cup white wine
2 tbsp virgin oil
1/4 cup maple syrup
3 cloves garlic, chopped
6-8 basil leaves, chopped
pinch of black pepper
squeeze of fresh lemon or 1 tbsp
lemon slices or wedges ( to garnish )


In a shallow dish, add the marinade ingredients and mix together. Add the shrimp and cover with the marinade using a brush, or toss covering both sides. Cover and refrigerate for 15 minutes.

Have the barbecued heated and on a tin-foil barbecuing baking pan, ( one with holes ) brush oil to cover the bottom. Place the shrimp on the baking dish and spoon on the marinade. ( you can place the shrimp directly on the barbecue if desired and add marinade on at the end.)

Barbecue the shrimp for approximately 5 minutes on each side or until browned nicely. Brush with the marinade throughout the cooking process.

Serve with a garnish of fresh basil and a lemon wedge or slice.
