Top notch grilling beef, thick, juicy… and when cooked to perfection….it’s nothing short of fabulous. Seasoned steaks, Appleton Jamaican rum inspired barbecue sauce and sear the meat topped with blue cheese, an acquired taste for many.
Succulent….mouth watering, with the wonderful flavour of rum, blue cheese and barbecue sauce,….. Now this is barbecuing at it’s finest!
2 good sized prime rib sterling silver medallions
2 tablespoons steak spice
2 tbsp extra virgin olive oil
1/4 cup Barbecue sauce
1 oz appeton rum
pinch black pepper
1 tsp parsley
1 tsp fresh squeezed lemon juice
1 cup freshly sliced mushrooms
2 tbsp butter or margarine
1/4 cup or small package blue cheese ( use amount desired )
Rub the steaks with extra virgin olive oil, season with steak spice and leave to sit at room temperature for 30 minutes.
Slice and saute the mushrooms till almost done. Set aside. Add the rum to the barbecue sauce and have ready when the steaks are put on the barbecue. On the barbecue place the steaks directly on the grill. Cook for 5 minutes before putting the sauce on one side. Cook for a few minutes longer. Turn the steaks and cook again for another 5 minutes or so ( depending on thickness) and then add sauce to the other side.
Close the lid of the barbecue and cook, for a few minutes….checking the steaks regularly to make sure they are not burning. You can continue to add more barbecue sauce to each side and cook till done. ( Cooking time depends solely on your perference of rare to well done ). Best choice for such delicious prime rib is meduim rare. ** Don’t overcook as you can always put them back if not cooked enough!
When almost ready, finish cooking the mushrooms, adding a few while on the barbecue and top with crumbled blue cheese. Close the lid for a few minutes, letting the cheese melt and then remove and serve immediately.
Serve with grilled garlic bread, ceasar salad and a bottle of the finest Australian merlot wine. Serves 2
