10 medium sized shrimp, tails on or off
2 tbsp chili sauce
4 tbsp light sour cream
1 stalk celery finely chopped
2 garlic cloves, finely chopped
1 green onion, finely sliced
1 small bunch fresh chopped parsley
1 small bunch fresh chopped cilantro
pinch black pepper
1 tbsp virgin oil
1/4 cup grated mozzarella cheese
2 tbsp grated parmesan cheese
1 tbsp fresh squeezed lemon juice
splash of white wine
In a heated skillet add virgin oil and finely chopped garlic, celery and green onion. Saute for a few minutes and then add shrimp and saute adding black pepper and fresh herbs.
Cook on a medium heat before adding chili sauce, white wine and lemon juice and heat before adding sour cream. Stir for a few minutes before removing from heat and placing in a shell type cooking dish. Top with mozzarello cheese and parmesan cheese. Place the dish in a preheated 350 degree oven and bake for 10 minutes. Broil the shrimp dish for a few more minutes until golden brown then serve.
Serve with vegetable couscous, rice or a side salad with a fresh baguette. Garnish with parsley and lemon slices.
