Meatloaf has been a long time favorite of ours, a comfort food of sorts, which kind of brings you back to your childhood days. I loved my mother’s meatloaf, served with mashed potatoes and vegetables, but sometimes it’s a nice change to try something new.
This recipe is a twist on the traditional….and boasts a tangy, zesty taste with sweet chili sauce, peppers and a spicy Italian sausage in the centre of the loaf. Ohhhhh sooooo yummy!
1 lb. lean ground beef
1 cup panko bread crumbs
1 link of Italian sausage ( casing removed )
1/4 cup chili sauce
1 tsp worchestshire sauce
1 tsp chili powder
1 tsp garlic spice
1 tsp thyme
1/2 medium sized onion, finely chopped
1/4 cup finely chopped green pepper
1/4 cup finely chopped red pepper
2 tsp crushed chili peppers/pimentos ( in a jar )
12 tsp black pepper
1/4 cup ketchup
2 tbsp fresh chopped parsley
In a large mixing bowl, add the ground beef and bread crumbs. Add the two eggs and stir the mixture until moist and the bread crumbs are completely stired in. Add the rest of the ingredients, along with the finely chopped vegetables and mix thoroughly.
Make sure that the mixture is fairly moist. Spray a loaf pan with vegetable oil before adding the loaf mixture.
Place half of the ground beef mixture on the bottom of the pan, and pat down with your hands. Place the sausage in the middle of the loaf pan and then place the rest of the ground beef on top and pat down firmly.
Top the meatloaf with a chilli sauce or tomato chutney sauce. Spread to cover the entire top of the loaf. Place in a preheated 375 degree oven for 1 hour. Remove and let cool and the meatloaf will set before you remove it and place onto a cutting board.
Serve with garlic whipped potatoes, beef gravy and steamed vegetables.
