Shrimp & Tomato Brushetta Bites

These are wonderful appetizers….so easy and delicious! Great for entertaining over the holidays. With canned shrimp on hand, you can whip these together when friends or family drop by.


1 can small shrimp
1 baquette
1 package cream cheese
2 – 3 tomatoes, finely chopped
3 cloves fresh garlic, finely chopped or minced
1 tsp. basil, fresh chopped or dried
1/4 cup virgin oil ( use as needed )
1 tbsp balsamic vinegar
pinch of sea salt
pinch of black pepper
1 tbsp fresh chopped parsley, or dried
1/4 cup parmesan cheese
fresh squeeze of lemon juice
lemon or lime slices


Chop the tomatoes, garlic and herbs and mix together with the oil, balsamic vinegar and the rest of the ingredients. Open and drain the canned shrimp and add to the mixture. Blend throughly.

Slice the baquette into bite sized slices and spread with cream cheese. Top the slices with the shrimp mixture and sprinkle with parmesan.

Preheat oven to 350 degrees and place on a cookie sheet in the oven for 10 minutes. Turn the oven to broil and move the brushetta bites up in the oven and broil till the parmesan is slightly browned.

Serve hot and garnish with lemon, lime slices and fresh parsley sprigs.
