I love quiche…and it’s such an elegant dish to serve company for brunch. Quiche is also a nice way to get away from the usual breakfast of bacon and eggs, and you can serve it just about anytime of the day.
This ‘Bacon Brunch Quiche’ is filled with veggies, bacon and lots of cheese…and is one of those dishes that always tasted just as good the next day.
1/8 teaspoon salt
1/4 cup cream cheese, cut in small pieces
8 strips lean bacon, cooked and crumbled
4-5 medium eggs
1/4 cup onion, finely chopped
1/4 cup green onion, finely chopped
1/4 spinach, frozen chopped
3-4 sliced mushrooms
1/4 cups half-and-half or whole milk
1/4 teaspoon dried leaf thyme & parsley
1/8 teaspoon pepper
1 cup shredded sharp Cheddar cheese
For a quick and easy quiche, I always have frozen pie crusts in the freezer.
In a small bowl, whisk together the eggs, milk, thyme, and pepper. Add in the cream cheese. and continue to whisk. Crumble bacon into the pie crust along with the onions, green peppers and spinach. Add the egg mixture and top with the shredded Cheddar cheese. Sprinkle pepper on top as well.
Bake at 375° for about 30 minutes, or until quiche filling is set and top is lightly browned. Serve the quiche with fresh tomato wedges or a tossed salad.
