Citrus Poached Salmon

Simple …yet elegantly delicious. It doesn’t get much better than fresh salmon and needs very little to dress it up.

A great tasting tangy citrus vinegarette with oranges, lemons, limes, herbs and white wine, enhances the wonderful taste of the salmon.


1 salmon fillet
1 orange
1 lime
1 lemon
1 sprig rosemary, whole
1 tsp parsley, chopped
parsley sprigs
1/4 cup orange juice
1/4 white wine
1 tbsp cilantro, chopped
1 onion, sliced
1 clove garlic, chopped
1 tbsp virgin oil
pinch black pepper


In a skillet add virgin oil and saute sliced onions and garlic for a few minutes. Add salmon fillet, herbs, orange juice, squeezed lemon and lime, then add the white wine.

Cover and simmer on a medium heat for approximately 5 minutes or until fish is firm and cooked.

Remove fish and serve with fresh lettuce garnish, lemon/ lime slices and oranges. Top with orange rind and then drizzle with the citrus vinegarette dressing and onions.
