Fajitas are great for lunches, suppers or anytime of the day snacks.
This Caribbean inpsired wrap offers the cool, fresh taste of mangos with that spicy flavor of hot peppers and sauce.
( ** Recipe is for two fajitas )
2 Fajita wraps
1/2 Fajita seasoning package
2-4 slices mango, chopped
2 boneless chicken breasts
1 carrot, sliced
1/2 zucchini, sliced
1/2 onion, chopped
1/4 green pepper, sliced
1 stalk celery, sliced
4 large mushrooms, sliced
1 clovd galic, finely chopped
black pepper to taste
2 tbsp virgin oil
jalepeno apricot barbecue sauce ( or other spicy dipping sauces )
1/2 tsp jalepenos
1/2 tsp red peppers
Sliced the boneless chicken thinly and saute with virgin oil in a skillet till cooked. Add the fajita season package and enjoy water to make a thick sauce. Remove and set aside.
Add more virgin oil and saute the vegetables till transulcent. Return the chicken mixture to the skillet and add the herbs, barbecue sauces and cook for a few minutes, adding the chopped mango in at the end to warm slightly.
Serve onto a fajita wrap, fold to make a secure wrap, using a toothpick to hold in place.
Garnish with some fresh parsley and mango slices.
