Oyster Bok Choy Stir Fry


Fall veggies are in their prime right now….and I love them all. Seeing as I am not a vegetarian, even though I sometimes wonder why, most likely because I do love my favorite meals of steak and chicken. My first love however is fish… all fish, cooked every way!

Ingredients

1 package of fresh baby bok choy
2 green onions
1 clove garlic
10 small yellow grape tomatoes, halved
2-3 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp brown sugar
1 tbsp sesame seeds
2 tsp red chillies
2 tbsp virgin oil
pinch of black pepper

Prepare

Cut ends off of the bok choy and wash thoroughly. In a wok or large skillet, add virgin oil and saute green onions and garlic. ( Add 1/2 cup fresh slice mushrooms – optional ).
Add the boy choy leaves, cover and steam for a 2-3 minutes.

Remove cover and add the tomatoes and the rest of the ingredients. Sprinkle with sesame seeds and stir fry for a few more minutes until the leaves are soft and covered in sauce. Serve immediately.

Serves 1-2
