Teriyaki Chicken and Sesame Stir Fry

This is a quick and easy stir fry dish with fresh vegetables and chicken. A great way to finish up veggies in your crisper and a fast meal for a busy work week.


2 boneless chicken breasts
2 stalks celery, chopped
1 small zucchini, sliced and chopped
1 onion, chopped
2 carrots, chopped
1/2 green pepper
1-2 cloves garlic
1/2 cup mushrooms, sliced
1 tbsp fresh chopped ginger
2 tbsp fresh chopped parsley
1 tsp black pepper
1/4 white wine or cooking wine
1/4 teriyaki ginger sauce
1 tbsp basil
1/4 extra virgin olive oil
1/4 sesame seeds
1 tbsp soya sauce
1/2 lemon, squeezed and sliced for garnish


Slice the chicken into bite-sized pieces. Add virgin oil to a skillet and cook chicken then set aside. Drain off fat and wipe clean. Add to the skillet, vigrin oil and the chopped vegetables. Saute and add herbs, spices, white wine, lemon juice and sauces. Return the chicken to the skillet and add sesame seeds.

Saute till vegetables are translucent and not over cooked Serve with rice or noodles and garnish with parsley and lemon.
