Summertime…summertime! Fresh vegetables and fruits are a wonderful way to plan your meals.
With bright colours, warm textures and tangy spices and herbs, along with some inspiration from the Caribbean, is all you need to come up with this tasty salsa. Mango and a hint of curry bring this delicious salsa to life. Colourful and cool, with sweet and tangy tastes, this dish will be a hit.
Serve with tortilla chips or with your favorite chicken or fish recipe. A great salsa for summertime dining.
1/2 red onion
1 – 2 cloves garlic
1/2 green onion
cilantro, 2 sprigs, chopped about 1 -2 tbsp
pinch of curry powder
pinch of cumin
pinch of black pepper
dash of sea salt ( optional )
2-3 tbsp extra virgin olive oil
1 tsp lemon juice and lime juice
1 tbsp slivered almonds (optional )
Peel and chop all vegetables finely and add to a mixing bowl. Add the fresh herbs and spice, virgin olive oil and juices and almonds. Mix and chill for 30 minutes.
Serve as an appetizer with tortilla chips or add with your favorite fish or chicken dish.
