This is a wonderful summer dish of fresh garden vegetables and sausage.
Served with a tangy ginger yogurt dressing, it gives this dish a cool fresh taste of summer. A nice option for summer dining instead of rice, pasta or potatoes is Couscous. Light and fluffy it provides a great backdrop for any of your dining pleasures!
2 Italian sausages, cooked
1 tomato, chopped into bite-size pieces
2 -4 portobello mushrooms
2-3 broccoli florets
1/2 cup mini carrots, sliced or two large carrots chopped
2 cloves garlic, chopped
1 bunch parsley, chopped
2 green onions, chopped
1 onion, chopped in larger pieces
1/2 green pepper
2 sweet peppers
3 tbsp virgin olive oil
1/4 cup Italian dressing or vinegarette
1 tsp basil
1 tsp rosemary
1/2 tsp oregano
1 tsp fresh ginger, chopped
1/2 cup yogurt
1/2 cup Mediterranean Exotic couscous
1/2 cup water
1/4 cup red wine or liquid cooking wine
fresh squeezed or 1/2 tsp lemon or lime juice
Ginger Yogurt Dressing
In a small bowl add the yogurt, along with the finely chopped garlic and ginger, a pinch of pepper and 1 tsp parsely and squeezed lemon. ( sprinkle of sugar is optional ) Cover and chill until the stir fry is ready.
In a skillet cook and brown the sausages and set aside to cool. When cooled slice into bite-sized pieces. Chop the vegetables into chunks. Add olive oil to the same skillet that you used for the sausage. Add the veggies except for the mushrooms and tomatoes, and begin to stir fry browning and tossing the veggies. One you have lightly brown the veggies, you might need to add more oil, you can now add in the wine and continue to cook veggies as the wine reduces. Add the herbs, pepper, garlic and green onion. ( these veggies should be chopped quite small )
Cook the couscous as per instructions on the package.
Add the italian dressing to the skillet, along with the sausage, mushrooms and tomatoes. You may add more wine if desired and stir the veggies and sasuage until cooked. El dente style is the best way to assure crisp vegetables.
Fluff the couscous with a fork and you may microwave it to warm, or serve cool.
Arange the vegetables beside the couscous and add a dollope of the ginger dressing on the side. Garnish with parsely.
