1 box pasta salad ( I usually keep one in the cupboard for a good starter to a pasta salad )
1/2 cup whole rotini pasta, cooked
1/4 cup mayonnaise
1/2 green pepper, chopped
2 eggs, hard boiled and chopped
3 small sweet peppers, red, orange and yellow, chopped
1/2 cuccumber, peeled and chopped
1 stalk celery, chopped
2 stalks green onions, chopped
1 cloved garlic, chopped fine or pressed
1/4 cup mediterranean feta vinegarette dressing
1 tsp chopped basil
1 tsp chopped parsley
1/2 tsp black pepper
1/2 tsp sea salt
6 black olives, sliced ( optional )
Crumbled Feta cheese ( optional )
2 tbsp parmesan cheese
Cook the macaroni pasta salad per instructions. If you don’t have a cold pasta box on hand, just use a cup of macaroni pasta.
Cook the rotini pasta, it takes a bit longer. Make sure that pasta is not mushy, should still be firm. Rinse and cool.
In a mixing bowl, add pasta, and all of the ingredients. Mix in the mayonnaise and the mediterranean vinegarette dressing. Add herbs and mix well. If you desire your pasta salad creamier, just add more mayo or dressing. ** Judge by taste.
Chill for a couple of hours before serving.
