Summer Brushetta


2-3 Ripe fresh vine tomatoes
2 cloves garlic
2 sprigs chopped dried basil
pinch of black pepper
2 tbsp virgin olive oil
1 tsp balsamic vinegar
Parmesan cheese
1 fresh baquette ( I used Acadian fresh cheese baguette ) 6 servings.


Chop tomatoes into small pieces, peel if desired but not necessary. Add to a bowl with chopped or pressed garlic. Add the the balsamic vinegar, 1 tbsp virgin oil and chopped basil and black pepper. Mix together and set in the refrigerator until ready to prepare the brushetta.

Slice the baguette horizontally and make the slices a good size for each serving. Not too thick. Place in a preheated 350 degree oven for a few minutes, till toasty then remove. Set the oven to broil.

Place the other tbsp of virgin oil in a small bowl and with brush each piece of baguette. Top with the tomato mixture, add parmesan cheese to each one and place under the broiler for a few minutes…until browned slightly.

Serve warm along with a lovely glass of chardonnay. Enjoy!

Serves 2 ( increase the ingredients to serve a group )
