1 haddock fillet
3 or 4 sheets of phyllo pastry
4 slices fresh lime
1 tblsp butter
3 leaves of fresh basil
1 tbsp fresh chopped parsley
2 cloves fresh garlic, pressed or chopped
1/2 tsp black ground pepper
2 tbsp sesame ginger vinegarette

Lay out two sheets of phyllo pastry on a greased cookie sheet. Lay the haddock the length of the pastry. Top the fish with lime slices, basil leaves, parsley, garlic and black pepper and sesame ginger vinegarette . (You can also put in cheese, spinach or other veggies of choice. )
Roll up the pastry from one end to the other. Using a pastry brush cover the outside with butter.
Place in the preheated oven for approximately 15 minutes at 350 degrees. The pastry will brown on top but make sure you give enough time for the fish to cook.
Serve with fresh salad and drizzle with a raspberry vodka lime sauce.
