Phyllo Wrapped Haddock with Basil and Lime

1 haddock fillet
3 or 4 sheets of phyllo pastry
4 slices fresh lime
1 tblsp butter
3 leaves of fresh basil
1 tbsp fresh chopped parsley
2 cloves fresh garlic, pressed or chopped
1/2 tsp black ground pepper
2 tbsp sesame ginger vinegarette
Raspberry Lime Vodka Drizzle ** Sensations -Our Compliments brand from Sobeys

Prepare

Lay out two sheets of phyllo pastry on a greased cookie sheet. Lay the haddock the length of the pastry. Top the fish with lime slices, basil leaves, parsley, garlic and black pepper and sesame ginger vinegarette . (You can also put in cheese, spinach or other veggies of choice. )

Roll up the pastry from one end to the other. Using a pastry brush cover the outside with butter.

Place in the preheated oven for approximately 15 minutes at 350 degrees. The pastry will brown on top but make sure you give enough time for the fish to cook.

Serve with fresh salad and drizzle with a raspberry vodka lime sauce.

Simple but elegant looking and tastes wonderful!

Sprat, This dish looks delicious and I would like to give it a try. My question is, how do you make the raspberry vodka lime sauce? I can’t seem to find that info. Thanks

Sandy…thanks for checking out the recipe, and the Raspberry Lime with Vodka drizzle is made by ‘Our Compliments’ here in Canada through Sobeys. If you looked at the grocery store, I am sure that you could find something comparable if you are not in Canada. Maybe check out the specialty items…..and you can use pretty much anything sweet to drizzle on top. πŸ™‚
