Turnip & Apple Soup with Hamburger


What a wonderful soup with flavours of apple, nutmeg and cinamon. A great soup for any time of the year with it’s fresh and delicious blend of fresh veggies and tomatoes.


1 turnip, chopped
1/2 lb lean hamburger
1 apple, peeled and chopped
1 carrots, chopped
1 celery stalk, chopped
1 onion, chopped
1/2 leek, chopped
2 potatoes, chopped
2 chicken oxo cubes
1 28 oz. can diced tomatoes
8 cups water
2 tsp parsley
2 – 3 tsp nutmeg
1 bay leaf
1 cinamon stick ( or 1/2 tsp cinamon )
1/4 cup virgin oil


In a large soup pot, add oil, chopped onion and hamburger. Cook hamburger and onions till done, remove and set aside in a bowl. Pat off any excess fat if any.

Add 3 cups water to the pot along with carrots, celery and potatoes. Add one chicken oxo cube. Cook for approximately 5 – 10 minutes, making sure the veggies are slightly cooked. Add the chopped turnip ( small pieces ), chopped apple and leeks. Add the tomatoes, hamburger onion mixture and the rest of the wate and the spices and the 2nd oxo cube. You can also add the cinamon stick for extra flavour.

Cook for 30 minutes or more, on a low to medium heat, stiring regularly. Pepper to taste. Add salt if desired. (Turnip should be soft which adds to the soups texture. )

Serve with chees sticks and garnish with parsley and a cinamon stick.

      Hey Penny…how are things in Truro. Today is beautiful here in Moncton, might head to the shore. Thanks for checking out the recipes., I really loved this soup Penny. I do know that you can just copy and paste the recipe into a word document, if you can’t print it out without the pics.
