3/4 cup *Whole Wheat Healthy Harvest Rotini
1 package of chicken soup – any brand ( or chicken bouillon mix )
3 cups cooked chicken
4 cups water
3 chicken oxo cubes ( if needed )
3 celery stalks, chopped
2 carrots, chopped
3 small okra, chopped ( optional or substitute zucchini )
3 green onions, chopped
3 cloves garlic, chopped
1/2 cup spinach, chopped
2 plump ripe tomatoes, chopped
1 cup mushrooms, sliced
1/2 tsp thyme
1/2 tsp rosemary
salt and pepper to pepper to taste
2 tblsp butter
In a medium-sized soup pot, add butter and saute green onions, celery, carrots and okra ( or zucchini ). Leave the mushrooms till the end. When vegetables are still crisp add water, chicken soup package and bouillion, spices and bring to a boil. Reduce heat, then add chicken, tomatoes and spices and spinach.
Cook soup for approximately 25 minutes on a low to medium heat. Add in the whole wheat rotini noodles after 10 minutes. (Keeps the noodles firmer ), adding the sliced mushrooms at the same time. Salt and pepper to taste.
Serves 4 – 6 and garnish with fresh parsley.
