Ham and Goat Cheese Stuffed Chicken breasts


This is an easy dish for anyone who doesn’t really enjoy cooking. Savory chicken breasts stuffed with shaved ham, goat cheese and spinach….smothered in a tangy lemon dill sauce. A great dish for those who cook on their own.

Ingredients

2 large chicken breasts ( bone in or boneless )
2 slices shaved ham
2 tablespoon garlic herb goat cheese
1/4 cup spinach
1 tsp thyme
2 basil leaves
ground black pepper
1 tsp garlic all spice
1/2 lemon and lime, sliced
White wine
Lemon Dill Sauce ( use directions on package )

Prepare

Wash and pat dry chicken breasts ad cut off excess fat. Make a slice above the bone or slice in the middle of the chicken breast. Lay out the 2 shaved ham slices and put 1 tablespoon of goat cheese, and half of the spinach in the centre of each ham and roll up and wrap in the ends.

Tuck the ham and goat cheese into the open pocket in the chicken breast. Add a basil leaf in each one.

Place the chicken breasts in the centre of the fold on the parchment paper. Stuff a slice of lemon and lime in the pocket with the ham. Squeeze lemon and a splash of white wine on each breast before adding herbs.

Fold the paper over the chicken breast, then folding in the sides before rolling the edges closed. Place the two chicken breasts on a baking sheet and place in a pre-heated oven at 350 degrees. Bake for 45 minutes.

In a small saucepan make the lemon dill sauce as per instructions on the package.

Remove from the oven and let cool for a few minutes before opening the parchment paper. Be careful as the steam will be very hot.

Serve with rice and vegetables and garnish with lemon and lime.
