Garlic Ginger Salmon baked in Parchment

Salmon tastes delicious done in parchment paper. Easy to do, and the steaming process in the paper turns out perfect fish every time. No mess and and easy clean up.


2 sheets parchment paper
2 salmon pieces, centre or fillets
2 slices lemon
2 slices lime
2 green onions, chopped
2 cloves garlic chopped
10 mushrooms, sliced
1/4 slivered or sliced almonds, toasted
2 tbsp. garlic, ginger and sesame stir fry sauce
1 tbsp lemon juice


Place salmon pieces on parchment paper. Top the salmon with green onion, garlic, slice of lemon and lime and add mushrooms. Sprinkle the spoon full sauce over the salmon, then lemon juice and wrap.

( If you are using parchment sheets, place the salmon by the centre fold. Fold over one side, and turn the corners in and wrap the salmon in a half moon shape. You do not need to wrap it too tightly.

Place on a baking sheet and place in the oven at 350 degrees for 20 minutes or until the salmon flakes. (Do not overcook ) When fish is almost done, in a pie plate, toasted almonds in the oven.

Serve with rice, lemon and lime wedges and vegetable of choice. ( We choose brussels in butter and poppy seeds ).
