These are wonderful cedar wraps made in Nova Scotia Canada from Red Wood on the west coast.
A nice way to cook up fish or chicken….
The final dish….after I tied the wrap and placed it in the oven… turned out so delicious.
1 package of gourmet cedar wraps ( Presidents Choice, Canadian made )
2 fillets fresh ocean perch
1/4 cup white wine
1/2 cup sweet peppers, mixed (red & yellow ), sliced
1 stalk green onion, sliced but saving one long piece to tie the wrap
pinch of rosemary
pinch of thyme
1/4 tsp black pepper
1/4 cup garlic onion liquid wine seasoning
1/4 tsp parsley
1 tblsp freshly chopped sage
Lime and lemon wedges
Add to the fish when ready to serve:
3-4 cherry tomatoes
4 bean salad ( fresh or pickled from Costco )
1/2 cup sauted mixed mushrooms, shitake, mini bella and white
2 tbsp butter
Soak the cedar wraps for 20 minutes in either, water, juice or wine. ( wine is the best )
Remove from the soaking dish and set on a baking dish. Save the wine to add to the wrapped fish.
Add the fillets, or salmon/ halibut piece to the cedar wrap. Add fresh herbs, black pepper, garlic pepper and top with thinly sliced peppers and green onions. Sprinkle the top with the garlic onion liquid wine seasoning.
Stir fry the mushrooms for a few minutes in butter. Have ready for the final dish.
When fish in place topped with peppers, wrap as tightly as possible bring the sides together and tie with the green onion. Add the reserve white wine from the soaking and top the fish before placing in the oven.
Bake at 350 degrees for 20 minutes.
Remove the wrapped fish and add to the plate with the sauted mushrooms and 4 bean salad. Garnish with cherry tomatoes and parsley and fresh lemon and lime wedges.
A simple, yet elegant dish for one or you can add to the recipes for friends and family.
Pair with a chardonnay wine of choice.
