Delicious Cabbage Rolls


This is one of those childhood suppers that brings back memories from when my mom would make them. I loved them. Serve simply with new potaotes.

I searched through a few recipes and decided on some ingredients from a few of them…lol…I tend to do that.

Cabbage Rolls are made with cabbage leaves filled with ground beef, pork and rice, with tomato sauce.

Ingredients

1 large cabbage
14 cabbage leaves ( chop up the remainder of the cabbage for the bottom of the casserole dish )

Filling:

1/2 pound ground beef
1/2 pound ground pork
2 pork sausage links ( optional )
3/4 cup uncooked rice
1/4 cup panko breadcrumbs
1 1/2 cup finely chopped onion ( 1 onion sliced for the bottom of the baking pan )
1/4 cup green & red pepper
1 carrot, shredded
3 cloves garlic, chopped
1 tsp chopped sage & parsley & thyme
2 eggs
1 teaspoon salt
1 teaspoon ground black pepper

Sauce:

1 cans (8 ounces ) tomato sauce
1 can (14.5 ounces) diced tomatoes, undrained
2 tablespoons brown sugar
1 can tomato soup
1/2 cup water
2 tablespoons cornstarch mixed with 1/4 cup cold water ( optional if needed )

Preparation

Core the cabbage and set into a pot of boiling water, then drop the temperature.

Place cabbage into boiling salted water; cover and cook until the leaves fall off from the outside. Remove them from the pot and set aside.

For your filling, combine ground beef, pork, rice, onion, breadcrumbs, eggs, salt, pepper, and herbs. Mix well and divide into 14 portions.

Set aside your leaves, then chop the remainder of the cabbage, throw about the tough centre part, and add to the bottom of the baking pan along with one sliced onion.

For sauce, combine tomato sauce, tomatoes, sugar, soup and 1/2 cup of water. Pour some of the sauce on top. Then place a portion into the center of each cabbage leaf. Remove the tough end of the stem from the leaf, then roll the filling inside and turn in the corners.

Line the baking pan with the rolls, onto top of the chopped cabbage and sauce and place then tightly beside each other. This baking pan easily fit 7 rolls per side. Pour the remainder of the sauce over cabbage rolls.

Bake covered in a preheated 350° oven 40 to 45 minutes. Baste the sauce from time to time on top of the rolls.
Bake uncovered for an additional 10 – 15 minutes.

Recipe yeilds 14 cabbage rolls. Two per person served with new mini potatoes.
