1 tablespoon butter
1/2 cup chopped green bell pepper
1/4 cup sliced green onions
3 cloves garlic, minced or chopped
3 cups tomato vegetable juice cocktail
1 cup clamato juice
1/2 cup water
2 chicken boullion cubes
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon dill
1/4 tsp rosemary
1 bay leaf
1/2 teaspoon salt
t tsp black pepper
1/2 cup uncooked long-grain white rice
3/4 pound fresh or frozen shrimp
Saute garlic in virgin oil with the green pepper. Add tomato, clamato, water, chicken oxo cubes and spices. Add rice and shrimp.
Cook on stovetop for 30 minutes. The longer you cook it the better it tastes!
Serve with fresh rolls or bread and butter.
