1/2 cup snow peas
1/2 cup mushrooms
3 cloves garlic
1/2 green pepper
20 medium shrimp
3 cherry tomatoes
1/2 tsp lemon pepper spice
1/2 tsp parsley
1/4 tsp garlic spice
1/4 tsp curry powder (Jamaican or other )
1/4 tsp black pepper
2 tbsp virgin oil
Soak 3 skewers in water for 30 minutes. In a bowl add 1 tblsp virgin oil and garlic spice and add shrimp coating completely.
In a skillet add tbsp virgin oil and saute garlic, onion, snow peas, green peppers, mushrooms. Add spices and squeeze of fresh lemon juice and only cook till veggies are el dente. ( still crisp )
With the skewers place ( quarted ) lemon first, shrimp, half of cherry tomatoes, shimp, tomato & shrimp. Repeat on all 3 skewers. Grill under the broil till brown and cooked. Approximately 7-10 minutes.
Add the remainder of the shrimp to the stir fried vegetables and cook again till shrimp is cooked.
Avacado Chill Pepper Dipping Sauce
Slice avacado and remove pit. Scoop out avacado from each shell and place in small bowl. Add 1 tblsp mayonnaise, 1 tbsp sour cream and chopped red chilli peppers. Add a squeeze of lemon and lime juice.
Serve stir fry with garlic skewers and avacado dipping sauce. Also serve with nacho chips or rice crackers if desired.
