A good choice for Phase 1 of the South Beach Diet.
1/2 pkg herb tofu ( soft ) sliced and cubed
1 tblsp soya sauce
3 (or more) cloves garlic, crushed or chopped
fresh ginger (about the size of your thumb or larger), grated
pinch of black pepper
1/4 tsp scotch bonnet sauce
1/2 cup snow peas
2 green onions
2 celery stalks chopped asian style
1/2 red pepper sliced julienne style
* you can add any other vegetables, broccoli, mushrooms, carrots etc. if you choose
2 tblsp. seasame seeds
1/2 cup water
1 chicken boullion cube
2 tblsps Thai peanut sauce
2 tblsps virgin olive oil
Heat skillet with olive oil and cook tofu till a light brown. Remove and set aside.
In skillet with a touch olive oil, add chopped garlic, green onion, snow peas, celery and red pepper. Saute lightly adding soya sauce and ginger.
Return tofu to the skillet and add scotch bonnet sauce, pepper, thai peanut sauce and continue to saute. Add water and chicken bouillion. Bring temperature up and saute reducing liquid slightly. Add sesame seeds.
** If not following South Beach Diet phase one, serve this dish with rice or noodles.
