A fall favorite!
1 large sweet potato ( yam )
1 small apple (cooked and chopped – I used the cooked apple slices from the pork roast.)
1/4 celery stalk
1/4 small onion
pinch of pepper
1 clove garlic or garlic plus spice
Slice sweet potato lengthwise and slice round part off the bottom of each side so they flat on a baking sheet. Brush with olive oil and bake for 40 minutes at 350 degree oven.
Remove from the oven and cool. In a skillet saute finely chopped onion, celery and sausage and apple. Scoop out the sweet potato and add to the veggie mixture.
Scoop mixture into the potato shells and top with cheddar cheese. Bake at 350 degree oven for 10 minutes.
Serve with main dish.

Pair with a wine of your choice.
