Hearty Chicken Minestrone Soup




4 slices bacon
1 cup chopped onion
4 cloves garlic, minced
2 chicken boneless chicken breasts
1 stalk celery chopped
1 carrot chopped or ( frozen mixed vegetables – peas, corn, carrots & beans ) – my choice
1 14 oz. can tomatoes diced
1/2 package onion soup mix
1 chicken boullion cube
5 cups water
1/4 cup white wine or liquid wine seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon thyme
salt and pepper to taste
spaghetti noodles broken up ( basil & tomato )
1 cup garbanzo or mixed beans, drained
1/4 cup chopped parsley


In a large stock pot, cook bacon and drain off fat. Add onion, garlic, and chicken. When chicken is cooked add, vegetables, canned tomatoes, onion soup mix, boullion and water. Add wine, seasonings, beans and spaghetti noodles. Salt and pepper to taste.

Cook on medium 1/2 hour or longer. Simmering on low for another 1/2 hour for the soup to thicken slightly.

Serve with fresh Parmesan cheese, fresh rolls or crackers.

A hearty soup for a cold day.
