This is a delightful and refreshing dish! I started with a star fruit… first time I have tried this fruit by the way… ( more in Kitchen Rumblins’ ) and I ended up with a light meal. The citrus sauce packs a punch with the blend of lemons, limes and star fruit.
1/2 lb. asparagus
2 small atlantic salmon fillets ( garlic seasoned if desired )
1 cup milk
1 green onion
2 cloves garlic
1 tblsp butter or margarine
pinch of pepper
1 tsp of each or use fresh thyme, parsley and tarragon ( own desired amount )
1 tsp fish sauce
1/4 tsp ginger (fresh grated )
1 tblsp cornstarch
1/4 cup white wine
1 tsp orange ginger sauce
1/2 package sugar twin or sugar ( use sweetner to taste )
Cut off woody ends of asparagus and cook till just tender ( el dente )
In a saucespan add butter, garlic and onion. Cook for a few minutes before adding milk and seasonings. Add lemon, lime, orange ginger sauce, fish sauce and stir. Add white wine and cornstarch till thickened and add a touch of sweetner.
Brush salmon with virgin oil and place on grill. Add a splash of Garlic wine seasoning ( Culinary Wines – optional ). I used my George Forman grill and closed the top occasionally to grill the top. Cook approximately 5 minutes each side, only turning once, to grill each side. ( cook depending on the thickness of salmon).
When salmon is cooked remove and grill, lemon and lime slice, and star fruit.
Place the asparagus on plate, and place the salmon on top. Add the fruit and top with the citrus sauce and garnish.
A light and fresh dish with a wonderful blend of citrus and seafood.
Pair with a chardonnay of choice.
