First time trying this…and wow…it was delicious. Not too difficult…just have to take your time. 🙂 Yummmmm
1 large Vadalia or white onion
1/4 – 1/2 apple
2 cloves garlic
1 tblsp butter
pinch of parsley
pinch of thyme
pinch of oregano
1/4 parmesan cheese
1/4 cup panko bread crumbs
1/2 tsp garlic herb liquid seasoning or white wine.
Slice ends from the onion and peel. Strand onion of the bottom end and make slices 3/4 way down the onion, ( not through the centre core ) in quarters around the onion ( or 6 slices ) Place onion tin foil.
Slice thin apple wedges and stuff in slices around the onion.
Saute garlic and sliced mushrooms.
Top the onion with butter, herbs, and garlic mushrooms slices. Add 1 tsp garlic herb liquid season or a splash of white wine.
Wrap onion and place in a 350 degree oven for 1/2 hour.
Open tin foil after 1/2 hour and leave top open. With a fork, gently open onion slightly in the shape of a bloom. Mix the parmesan with the panko bread crumbs add to the top and bake for another 1/2 hour.
Before serving, sprinkle more parmesan cheese on top and broil onion till golden brown.
Carefully remove from tin foil and if desired pour the juices on top of the onion before serving.
A delicious side dish to any meal, or simply to eat on its own.
