10-15 Yellow Dutch New Baby Potatoes
1 yellow pepper
1 red pepper
2 green peppers (sweet or hot )
4 cloves garlic
1 medium onion
1/4 cup vigrin oil, use as needed
Fresh parsley, thyme, sage ( other herbs such as basil and rosemary if desired )
* Note* Herbs add to the wonderful taste
Wash and slice the potatoes in half. I like to par-cook them in the microwave which gives you less cooking time in the skillet.
Cut up vegetables and garlic and add to a skillet with virgin oil. Saute for a few minutes before adding the potatoes and herbs. Add more oil as desired and cook the potatoes allowing them to carmelize and get a nice golden brown. Add black pepper to taste. Test the pototoes, and if they need more cooking time, reduce the heat and you can cover till cooked.
Serve hot, garnish with herbs with any main dish.
