This is a delicous chicken dish with mandarin oranges and almonds. A nice choice to add to your chinese food selection.
2 pieces of boneless chicken
1 can water chestnuts
1 small can madarin quarters ( reserve juice for the sauce )
2 stalks celery
1 green onion
1/4 red onion
3 – 6 mushrooms
1 cup snow peas
1/4 green pepper
3 cloves garlic
tsp. ginger root
1/4 tsp thyme
1 tsp parsley
1 tbsp constarch
2-3 tblsp oranger ginger sauce
Cut up boneless chicken into bite sized pieces. Saute in skillet with olive oil, remove and set aside. Add garlic, onion, water chestnuts, celery, green pepper, ginger, snow peas to a skillet with olive oil and saute (el dente – still crisp ) then add mushrooms.
Add reserve juice from the mandarin oranges and the orange ginger sauce and increase heat so that it is bubbling. Add chicken then add cornstarch to thicken the sauce.
Toast almond pieces and set aside. Add mandarin oranges to the dish and simmer for 5 minutes, until sauce is thickened to desired taste.
Top with toasted almonds and serve. This dish is wonderful on it’s own or with a chinese meal.
