Salmon & Wildrice Cakes

A delicious fish cake with a wild taste of salmon & rice
A delicious fish cake with a wild taste of salmon & rice

Ingredients

1 can of salmon
1 package wildrice ( Lipton’s or Uncle Ben’s )
1/4 tsp. dry mustard
1/4 tsp. chili peppers
1/2 tsp. parsley
2 tblsp. parmesan cheese
1/4 cup celery ( finely chopped )
1/4 cup onion ( finely chopped )
2 cloves garlic ( or garlic spice )
1tsp. worchestshire sauce
1 tblsp. lemon juice ( twist of fresh lemon or lime )
1 egg
Dash of black pepper

Prepare

Drain salmon and place in a mixing bowl. Cook rice as per directions on package and cool.

Mix salmon together all ingredients, adding rice and egg at the end.

Shape into small patties.

Add virgin oil to skillet and bring temperature to a medium/ high heat. Add a few patties at a time. Make sure to cook till brown before turning. ( do not move the patties around in the skillet as to avoid them breaking apart )

Serve with a garden salad, lemon and lime wedges and tartar sauce.
