Zesty Caribbean Seafood Papaya Boat
Serving for two
Ripe papaya ( needs to be yellowish in colour and slightly soft to the touch )
8 medium to large shrimp
12 medium scallops
5- 10 pieces immitation crab meat
4 cloves garlic
2 celery stalks
2 tlbsp. Orange ginger sauce
1/4 to 1/2 tsp Jamaican curry spice ( to taste )
1/4 cup garlic herb liquid seasoning ( or other seasoning on hand )
Fresh herbs ( on hand ) I used sage and parsley
2 tblsp plain yogurt ( or more if need to make a sauce )
20 wlanut pieces
Cut papaya in half and remove seeds. Set the half boats aside.
In a skillet cook cut up garlic, celery and mushrooms. Add seafood. Scallops, shrimp and crab meat. Saute for a few minutes…till fish is cooked. Add add herbs, orange ginger sauce, Jamaican curry spice, yogurt and walnuts.
Cook for a few more minutes and set aside.
Cut the inside of the papaya, leaving a 1/4 inch around the skin. Chop up the pulp and add to the seafood mixture..and heat for a couple of minutes.
Spoon mixture over the papaya boat, filling to the top with seafood.
Garnish with fruit that is on hand.
