Quick & Easy Dish from Oven to Table

An Easy but Impressive Meal

*Always keep spaghetti sauce and canned mushrooms on hand. If you want more of a gourmet dish, use own homemade spaghetti sauce and fresh mushrooms & fresh herbs *


Chicken breasts or thighs – 6 to 8 pieces
1 680 ml can of spaghetti sauce
1 can sliced mushrooms
5 slices mozzarella cheese
1 onion
Black pepper
Garlic spice
Chilli peppers
Parmesan cheese
Spaghetti ( whole wheat tomato basil is a good choice )


Wash and remove skin from chicken. Add a small amount of virgin oil to a skillet and cook the chicken on each side to keep in the juices. ( 5 minutes ). Place chicken in baking dish. Add spices to chicken, cover dish and bake in 350 degree oven for 20 minutes.

Cook Spaghetti for 4 servings as per package. Drain and keep warm in pot.

Slice onions and celery. Remove chicken from dish and drain off excess fat.

Place chicken back in dish, add canned mushrooms, onions and celery and can of spaghetti sauce.

Bake for approximately 20 minutes, then add mozzarella slices and parmesan cheese to top of chicken. Bake uncovered till cheese is melted and parmesan is browned. Top with parsley.

Serve alone or with a fresh garden salad and/or garlic bread.

Serves 4

Wine of choice Red or White will be wonderful with this dish.
