Stuffed and rolled Tilapia with Orange Ginger Sauce


4-6 fillets of tilapia or sole
4- 6 slices of Rosemary Shaved Ham
1/2 package of pepper Goat cheese ( or regular )
Tomato & Basil almond slivers ( or regular almond slivers )
1 orange
1 lemon
1 lime
2 tomato
1 onion
3 garlic cloves
1 stalk celery
1 tsp. crushed chilli peppers ( bottle or dry )
Orange Ginger Stir Fry or Dipping Sauce
Garlic & Herb Liquid Seasoning ( Culinary Wines )
Fresh Herbs ( rosemary, thyme, basil )
1/2 cup of corn
1 tsp parsley

Prepare shaved ham and fill with 1 tsp of goat cheese and wrap. Make the same amount of ham wraps as you have for the fish fillets. Put in freezer for 1/2 hour util you are ready to roll the fish.

Prepare the fillets with the liquid herb seasoning in a large bowl, covering all fillets.

Place fillets on cutting board and place the wraps of ham and goat cheese in the center and wrap and use a toothpick to hold the end.

Place rolled fish fillets in a low baking dish, drizzle with herb liquid cooking wine and top with almonds.

Bake at 350 dgrees for 15-20 mins. (depending on thickness of fillets )

Tomato Orange Salsa

Cut up onion, garlic, crushed chilli peppers, celery, tomato and orange. Stir fry lightly in virgin oil, adding fresh herbs and corn and garlic and a splash of liquid herb seasoning.

In a small sauce pan heat orange ginger sauce and squeeze in lime and lemon juice. Heat on low.

Remove toothpicks and place fillets on slices or lemon or oranges.

Drizzle fillets with orange ginger sauce and top with a pinch of parsley and a handful of almonds.

Serve with garnish of limes, lemons & oranges.
