Maple Smoked Trout Wrapped in Bacon with Fresh Herbs
1 – 2 lb fresh trout (cleaned )
1 large onion
1 clove garlic
5- 10 cherry tomatoes
5 or 6 slices of maple flavoured bacon
Fresh herbs : Rosmary, parsley, orgeano, thyme
Wash trout and pat dry with paper towel. Use two layers of tin foil sprayed with vegetable oil.
Lay 5 or 6 strips of bacon on the tin foil. Lay fish on top. In cavity of fish stuff 1/2 of onion, 1/2 fresh herbs and thinly sliced lemons. Wrap the bacon around the fish, top with lemon slices and herbs. Use a cherry tomato in the mouth of the fish. Sprinkle fish with white wine and a squirt of fresh lemon and lime.
Wrap tightly and bake. ( either on the barbecue or in the oven )
Cooking Time for fish:
Preheat oven to 350. Bake for 15 minutes one side, turn fish, 15 minutes, then turn again and check. ( cooking time depends on size of fish and oven temp) In the oven, when done, open the tin foil and broil the fish to crisp the bacon.
While waiting for the fish, cook green beens and carrots al dente. Remove from pot and set aside.
Stir fry in a skillet remaining onion, garlic, mushrooms, then add green beans and carrots. Only add cherry tomatoes for the last minute of cooking.
Carefully remove the whole trout from the tinfoil and garnish fish with fresh lemon, lime slices, cherry tomatoes.
Serve with mushroom wild rice, and stir fried vegetables.
