Couscous Crusted Pan Seared Salmon


This is my new favorite way to cook fish!  We are fish and seafood lovers, have salmon regularly, either baked, grilled, broiled ….and have used just about every recipe out there to create some great tasting salmon dishes.

A few weeks back while in the dentist chair, not always the most pleasant place to be, I was watching a cooking show, and saw a dish on TV that I knew I was going to try…and I wasn’t disappointed when I tried it!

Salmon with a delicious coating of couscous…along with whole garlic cloves tossed in, fresh herbs and lemon. Be creative and add your own twist to this easy recipe!

Simple but delicious eating…

Ingredients

2 fresh salmon fillets
1 egg, beaten
1/2 cup couscous ( any kind – I used fruit & nut )
3 tbsp virgin oil
2-4 garlic cloves, peeled
3-4 fresh lemon slices
Fresh parsely, chopped
Fresh rosemary, chopped

Prepare

Add the beaten egg to a flat cooking dish. Add each fish fillet to the egg and dredge the salmon into the couscous making sure it is completely covered.

Add the virgin oil to the pan, and heat to a medium high temperature. Add the garlic cloves and cook till slightly golden. Add the fillets, along with some fresh chopped herbs, and sear on each side for 3- 4 minutes until fish is cooked and the coating is a golden brown. Squees some fresh lemon on top.

Remove and serve with a fresh garden salad of greens or top with olives. If you desire you can cook up the rest of the couscous and serve on the side.

Garish with the garlic cloves and lemon slices, and herbs.
